I love easy recipes, those are the ones you can adapt into your daily life even after a long day when you don’t feel like thinking too hard about what to eat. Instead of grabbing your instant box of whatever, try this easy squash hack instead.
Just chop you squash in half, scoop out any seeds, and then slice it into narrow pieces that resemble fries. Toss them with your fingers in a little olive oil and sea salt, thoroughly coating the outside of each fry. Now, either pop them in the oven for about 30 minutes or, my favorite, just lay them out on your panini press. Test them with a fork now and again to see if the have gotten soft enough inside. You can usually tell they are done by the golden color they develop.
