Taking Things for Granted

Of all the things I’ve lost in life, I miss my stove the most.

I mean it is fun trying to come up with things to eat on the daily that don’t require cooking. Fun until I look back at the week’s blown budget on ready-made food that I bought just because I was starving! Car life definitely forces you to plan every part of your day, especially meals, if you’re going to save any rent money at all.

So this is my current challenge. Simple, inexpensive meals that require very little but are still nutritious and interesting. Like this beauty above. Potato salad made with whatever was on hand:

 

Boiled Potatoes

Celery

Red Onion

Pomegranate

Salt/Pepper to taste

Honey Mustard Vinaigrette

 

I miss being able to rock this up real quick in the kitchen. Camp stove – next purchase!
